Sandy’s Lemon Essential Oil Glazed Bundt Cake


Sandy’s Lemon Glazed Bundt Cake Recipe

1 package lemon cake mix.  I use Better Crocker Super Moist.

2 packages (small) 1.85 oz Instant Vanilla Pudding

2/3 cup vegetable oil.  I use Smart Balance Omega oil.

4 eggs

1 cup lemon-lime carbonated beverage.  I use whatever no certain brand.

6 drops Lemon essential oils. 

Oven 325

Grease and flour 10 inch Bundt pan

In large bowl combine cake mix, pudding mix, and then stir in oil.

Beat in eggs one at a time.

Stir in lemon-lime soda and essential oil.

Pour batter in pan.

Preheat and bake for 35 minutes or until toothpick inserted in center comes out clean.

Allow to cool.  I wait 15 minutes until taking it out of the Bundt pan and about an additional hour before I put the glaze on – must be fully cooled.

Glaze

1 cup confections’ sugar

About 1 TBSP milk (sometimes I use vanilla creamer)

And 6 drops Lemon essential oils.

Sometimes I need to add a tiny bit of water to thin it a bit – Do not make too thin or it will run off and not set!
